Ingredients:

  • 1 Tablespoon Olive Oil ] Extra for Greasing
  • 8 Large Eggs
  • 1 lb Sausage
  • 2 Cups Spaghetti Squash, Cooked
  • 1/2 Teaspoon Sea Salt, Fine
  • 1/4 Teaspoon Ground Black Pepper
  • 1 Tablespoon Oregano, Fresh & Chopped
  • 1/2 Cup Cheddar Cheese, Shredded

Directions:

  1. Heat your oven to 375, and grease a 9x13 inch dish with olive oil before setting it aside.
  2. Add your olive oil to a skillet over medium-high heat.
  3. Brown your sausage until cooked, which should take about five minutes.
  4. Whisk together your eggs, squash, and oregano in a bowl. Season with salt and pepper.
  5. Add your cooked sausage to your egg mix, and then stir until combined. Pour into your casserole.
  6. Sprinkle your cheese on top, and cover with aluminum foil loosely.
  7. Bake for a half hour, and then remove your foil baking for another fifteen minutes.
  8. Let cool before serving.
