My Candy Secrets

Whilst the greatest effort has been made to ensure the quality of this text, due to the historical nature of this content, in some rare cases there may be minor issues with legibility. As much as I had inherited and learned as a child of candy making, it was not enough to save me many trials and sad mis takes when at sixteen I really began to make candies to sell. There was no book to teach me the things I needed to know. I had to learn almost entirely from experience - bitter experience. For a mistake meant loss of materials and time - a loss indeed in those days. Naturally, I learned much through years of trying this and that way, and I know that what I have learned of the hows of candy making will be a great help to those who would like to make candies at home. Therefore, I have written this book; and in doing so I have endeavored, not only in my text but by means of many photographs, to show clearly and concisely the methods of making the various kinds of candies, as I believe this will be far more helpful than a mere collection of recipes. Once the knowl edge of methods is understood, one can make at home as many varieties of candies as one's imagination may inspire.
