Because its easy It make eveytihning easy, there is very little splatter, the heat is even and controlled, the ability to cook for the top and bottom at the same time, the speed I can prep cook and be sitting to eat a (3minute) steak in 3min45secs. I have set out this book as simply as possible. I have set out the dishes so that they bounce off one another, and when you start making one type of dish the subsequent family of dishes will work off the first. I want you, and as many as possible to eat well, cook well, feel well all the time. That's gonna be through diet and loving to learn to cook.
