A nutrient is a chemical that an organism needs to live and grow or a substance used in an organism's metabolism which must be taken in from its environment. Nutrients are the substances that enrich the body. They build and repair tissues, give heat and energy, and regulate body processes. An essential nutrient is a nutrient required for normal body functioning that either cannot be synthesized by the body at all, or cannot be synthesized in amounts adequate for good health (e.g. niacin, choline), and thus must be obtained from a dietary source. Essential nutrients are also defined by the collective physiological evidence for their importance in the diet, as represented in e.g. US government approved tables for Dietary Reference Intake. The uniqueness of this book hence lies in the editor's way of reconstructing the chapter under review by delving deep into the areas of the subject.
