Food Chemical Risk Analysis

An introduction to the sciences of food chemistry and risk analysis. The text shows how the potential hazards associated with food chemicals can be analyzed using the tools provided by risk analysis. The risk assessment and management of food chemicals is broken down into its component parts and new approaches to their analysis are presented. Particular attention is focused on consumer perceptions of risk and risk communication.
