This compilation opens with a summary of current studies on the efficiency of biocides used as sanitizers in the food industry. Improper use of biocides in the food industry can lead to sublethal exposure, resulting in a major risk of microbial adaptation and cross-adaptation of some sanitizing agents. Following this, the authors explore factors that influence cleaning/sanitizing effectiveness, the biocides currently in use, providing some information on the exposure and risks, as well as the legislative framework for the use of biocides. In closing, the cytotoxicity of silver nanoparticles is studied using NIH-3T3, HEP-G2, A-549, PC-12, and Colo-320 cells via the MTT ((3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyl-tetrazolium-bromid) test.
