Enzymes are used in organic chemistry because of the control they offer the chemist. Traditionally, enzymes have been used in aqueous systems, but this has caused some problems in extending the technique to substrates which are insoluble in water. Enzymes have recently been used in reactions in which the solvent is not water, and this development has considerably enhanced the usefulness of the technique.
