This work provides new calculations and simulations on driving Raman transitions with two different lasers on a fast ion beam in collinear/anticollinear geometry. Simulations include ion energy distributions and spatial intensity distributions. First experimental results in the $\mathrm{S}_{1/2}$-$\mathrm{P}_{3/2}$-$\mathrm{D}_{3/2}$ and $\mathrm{S}_{1/2}$-$\mathrm{P}_{3/2}$-$\mathrm{D}_{5/2}$ $\Lambda$-schemes of $^{88}$Sr$^+$ are presented. A newly developed Doppler-free double Raman scheme is used to measure the $\mathrm{D}_{3/2}\rightarrow\mathrm{D}_{5/2}$ transition. The measurements performed in this work investigate the systematic uncertainties of this method as well as its experimental limitations and will demonstrate the feasibility and the advances of this approach.
